Once the lambs arrive at the slaughterhouses, they proceed to Finished Lots ready for sacrifice and will await slaughter according to these Lots. Lambs are slaughtered according to Lot and no other Lot can be slaughtered simultaneously or alternating with the current Lot.
Before the tags and identifying marks of the are taken off, a reading will be taken and must correlate with the identifying tags or tape administered to individual lambs by the Lamb of Extremadura P.G.I., complying with the Section regarding sacrifice and identification.
The carcasses will be classified into groups of Adequate or Inadequate, according to their weights, shape, sex, fat content and color of the meat and fat, complying with the Section on Classification and Certification.
